Sapphire Coast Smoked Fish - Premium Woodsmoked Seafood
Sapphire Coast Smoked Seafood is situated at the port of Eden on the Sapphire Coast in Southern New South Wales.

Eden has a large fishing fleet which catch a variety of fish from the surrounding seas. Our location means we can get our fish straight from the boats in the freshest possible condition. It is an area known for its sapphire blue waters, pristine coastline and its fish.


We enhance these quality fish by traditional smoking and curing methods to bring you our range of products. This is achieved by slow smoking without any artificial flavours, colours or preservatives.
Managing Director, Gary Corbett has had 20 years experience in the Australian fishing industry, trading in fresh & cooked fish. Gary has spent the last 5 years perfecting the art of smoking fish and developing his smoked fish programs. His philosophy is based around value adding the fresh fish caught locally to produce a range of premium quality woodsmoked seafood products.

Our location by the sea gives us first choice, so the premium quality of our raw fish product is guaranteed. Maintaining that quality throughout processing is the most important aspect of our business.

Having a new factory fitted out with new equipment enables us to maintain this hygiene and quality control.

Silver Warehou

Caught in the cold deep waters off the East Coast, this moist white fish is high in oil content and lends itself to smoking beautifully. The result is a natural golden coloured fillet. It slices easily and looks superb as hors-d'oeuvres or a buffet. Three flavours of Silver Warehou are produced: Natural, Peppered ( A unique blend of cracked peppers) and Cajun flavour.

Australian Salmon
Caught off the Sapphire Coast and is a mild tasting fish which is whole smoked. An underrated and often maligned fish, the flavour of the salmon is uniquely changed by the smoking process and is extremely versatile by virtue of its mild and moist taste.

Blue Mackerel
Australian Blue Mackerel Is also caught in Sapphire Coast waters, it is then brined, cooked and smoked to a golden brown color. Mackerel is sold whole.

Mussels
The mussels are smoked in our unique blend of timbers. We then marinate them in a range of natural sauces to produce four different varieties. Plain, Thai style, Mexican Chilli & Italian.
