Our Model 2300 is the choice of smallgoods manufacturers, large retail butchers, fish processors & food service professionals needing to hot smoke or cook larger food volumes. It is ideally suited for cold smoking fish or cheese when fitted with an optional separate smoke generator and refrigeration.

Model 2300 Features:
* Capacity up to approximately 380 Kg of heavy meat cuts
* Air circulation is provided by a two speed fan powered by a 2.2 kW motor which passes air directly over the heating elements for fast heat-up, efficient drying and long element life
* Internal and external cabinet constructed from Grade 304 stainless steel
* Air inlet and outlet vent dampers provide airflow control for drying, smoking and cooking
* Power line filter protects against power supply irregularities
* Temperature range to 160° C with a 200° C option for baking and roasting
* Programmable food core temperature probe for food safety without overcooking
* Our built-in external smoke generator provides dense smoke, control and safety not available when the smoke generator is inside a fan-forced cooking chamber
* Capacity for 7 product racks or more for special applications
* Stores up to 40 user-set drying/smoking/cooking programs
* Automatic product showering
